Guest guest Posted May 8, 2000 Report Share Posted May 8, 2000 * Exported from MasterCook * Cold Pasta and Broccoli Recipe By : American Wholefoods Cuisine Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups cooked spirals or shells -- ( 1/2 pound uncooked pasta) -- up to 5 cups 2 cups cooked kidney beans -- drained 4 cups diced, lightly steamed broccoli -- (about 1 pound) 6 tablespoons olive oil 3 tablespoons wine vinegar 1 teaspoon soy sauce 1 split clove garlic -- (optional) 3/4 cup grated Parmesan cheese Prepare pasta and beans if you do not have them already on hand. Steam broccoli for 8 to 10 minutes until barely tender. Combine oil, vinegar, soy sauce, and garlic, if desired, in a large, shallow serving bowl. Add pasta, beans, and broccoli, and mix well to serve. Add cheese at the table. Note: Refrigeration is recommended if this is made more than an hour in advance, but let stand at room temperature for at least 15 minutes to remove chill before serving.
