Secrets of Sensational Sin-Free Sweets Serving Size : 20 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups whole wheat pastry flour 1/4 cup arrowroot 3/4 cup Dutch-process cocoa powder 1/4 cup maple sugar 1/2 teaspoon baking powder 1/2 teaspoon sea salt 1/2 teaspoon ground cinnamon 1/4 cup blanched and pressed tofu 2 tablespoons canola oil 1 cup maple syrup 1/2 cup prune puree OR apple butter 2 teaspoons vanilla extract 1/2 cup dairy-free, refined sugar-free chocolate chips Preheat oven to 350F and oil a 9-inch square baking pan. Sift dry ingredients into a medium bowl: flour, arrowroot, cocoa, maple sugar, baking powder, baking soda, salt, and cinnamon. Stir with a wire whisk to mix. Puree tofu with oil in a blender. Add maple syrup, prune puree or apple butter, and vanilla and blend again until smooth. Pour the wet ingredients into dry ingredients and mix until batter is smooth. Stir in chocolate chips. Spread the batter into the prepared pan and smooth the top. Bake brownies on center rack of oven 20 to 23 minutes or until the surface looks dry. A cake tester inserted into the center removes almost, but not completely, crumb-free. Do not overbake or the brownies will be cake-like or too dry. Place the pan on a wire rack. When the pan of brownies is cool, cover with plastic and refrigerate or freeze before cutting into squares. Description: " Unemcumbered by nuts, these are brownies for chocolate lovers.
