Guest guest Posted May 8, 2000 Report Share Posted May 8, 2000 * Exported from MasterCook * Green Bean and Tomato Salad Recipe By : American Wholefoods Cuisine Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound green beans -- cut into 1-to 2-inch lengths (about 4 cups) 2 medium tomatoes 2 tablespoons wine vinegar 1 teaspoon soy sauce 6 tablespoons olive oil Steam beans for 10 minutes until just tender. Cut tomatoes into thin wedges, making 12 to 16 per tomato. Combine vinegar and soy sauce in a large shallow bowl and beat in oil until creamy. Add beans and tomato and let marinate for at least 1 hour at room temperature. If prepared in advance and chilled, remove 30 minutes before serving. Salad should be eaten at room temperature.
