Green Bean and Tomato Salad

1 pound green beans -- cut into 1-to 2-inch

lengths (about 4 cups)

2 medium tomatoes

2 tablespoons wine vinegar

1 teaspoon soy sauce

6 tablespoons olive oil

 

Steam beans for 10 minutes until just tender. Cut tomatoes into thin wedges,

making 12 to 16 per tomato.

 

Combine vinegar and soy sauce in a large shallow bowl and beat in oil until

creamy. Add beans and tomato and let marinate for at least 1 hour at room

temperature. If prepared in advance and chilled, remove 30 minutes before

serving. Salad should be eaten at room temperature.
