Guest guest Posted May 8, 2000 Report Share Posted May 8, 2000 * Exported from MasterCook * Greek Tomato and Cucumber Salad Recipe By : American Wholefoods Cuisine Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tomatoes 1 cucumber 2 tablespoons capers 2 scallions -- sliced salt pepper 1/2 teaspoon oregano 1 1/2 tablespoons lemon juice 3 tablespoons olive oil Slice tomatoes thin and cut each slice in half. Peel cucumber, if waxed, and slice thin. Alternate layers of tomato and cucumber in a shallow serving dish or flat plate. Top with capers and scallions. Slat lightly, pepper generously, and crush dried oregano over the top. Pour on lemon juice and oil. Mix gently just before serving. Note: For Minor Protein, crumble 3 to 4 ounces feta cheese on top.
