1 cup Mexican beer

12 ounces Monterey Jack cheese -- cubed

2 tablespoons flour

Bottled salsa

 

Add beer to sauce pan and heat to a simmer. In a bowl toss cheese with flour.

Add cheese to simmering beer and stir until melted and smooth. Add 1/2 cup salsa

and stir together. Serve warm with chips.

CHILLED AVOCADO SOUP

2 cups chilled vegetable broth

1 small peeled garlic clove -- pressed

2 ripe Haas avocados

1/3 cup lime or lemon juice

Salt and cayenne pepper to taste

Ice water

2 tablespoons chopped fresh cilantro leaves

1/2 cup finely chopped chives

1/2 cup plain yogurt or sour cream

 

Right before serving in a food processor puree the broth, garlic, lime juice and

1 of the avocados; season well to taste with salt and cayenne pepper.

 

Add ice water to thin the soup to the texture you like. Chill the soup while you

peel and cut remaining avocado into small dice. Fold the diced avocado into the

base and adjust the seasoning.

 

To serve, ladle soup into chilled bowls and garnish with cilantro, chives and a

dollop of yogurt in the center or each portion.

CORN, ZUCCHINI AND RED PEPPER QUESADILLAS

1 tablespoon oil

1/2 onion -- chopped

1 medium zucchini -- sliced

1/2 red pepper -- diced

2 teaspoon cumin

1 teaspoon cayenne

Salt

1 1/2 cup frozen corn -- thawed

1 package flour tortillas

Monterey Jack cheese -- grated

 

Preheat oven to 400 degrees. Add oil and onion to a hot skillet and stir. Add

zucchini and red pepper. Saute until tender. Season with cumin, cayenne and

salt. Add thawed frozen corn and mix together. Place 2 tortillas on cookie

sheet. Sprinkle with grated cheese and a large spoonful of veggie mixture. Top

with a second tortilla, cheese, and mixture. Top with third tortilla. Bake until

cheese is melted, about 5 to 8 minutes. Cut into quarters and serve bubbling

hot.

MELON LIQUADO

1 cantaloupe or honeydew melon -- peeled, seeds removed,

chopped

1 1/2 cups cold milk

2 cups chopped ice

3 tablespoons honey

 

Combine the fruit with the milk, ice and honey in a blender or food processor

and puree until smooth. Pour into tall glasses and serve immediately.
