Banana Pudding

10 ounces soft tofu

6 ounces firm tofu

2 small very ripe bananas

1/2 cup granulated sugar

1/4 cup soy milk (calcium fortified)

2 teaspoons vanilla

 

In a blender or food processor, blend all ingredients until creamy and smooth.

Pour into small dessert cups and refrigerate for 2 hours.

Tip: Garnish pudding with a slice of fresh banana on top or thin slices around

the edges of the bowl.
