Guest guest Posted May 5, 2000 Report Share Posted May 5, 2000 * Exported from MasterCook * Corn Chowder Recipe By :Tofu and Soyfoods Cookery - Peter Golbitz Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 onions -- chopped 1 red or green bell pepper -- chopped 2 ribs celery -- chopped 2 small potatoes -- cut in 1/2-inch cubes 2 cloves garlc -- pressed 2 tablespoons oil 4 cups water 1 small bay leaf 1/4 teaspoon thyme 4 teaspoons vegetable bouillon powder 2 1/2 cups frozen corn 1/2 pound firm tofu -- cut in 1/4-inch cubes 1/4 teaspoon freshly ground black pepper Saute the onions, pepper, celery, potatoes, and garlic in the oil until the onions are transparent. Add the water, bay leaf, and thyme. Bring the soup to a boil and cook untik vegetables are almost tender. Add the bouillon powder, corn, tofu, and black pepper. Serve when corn is tender. Garnish with red and green bell pepper rings.
