Key Lime Ice and Assorted Tropical Fruits

1 1/2 cups sugar

3 cups water

zest of 1 lime -- cut into strips

1/2 cup key lime or regular lime juice (you will

need 8 to 10 key limes to make 1/2 cup)

 

This ice is based on the small, invigorating key limes. If key limes or their

bottled juice are not available, substitute 3 regular limes.

Serve this ice with a platter of tropical fruits such as cubed mangoes, passion

fruit, baby bananas, carambola, and papayas. For an extra treat, pour 1

tablespoon of orange liquer into each dessert dish before adding lime ice.

Boil the sugar, water, and lime zest in a heavy saucepan, uncovered, for 8

minutes, stirring often. Cool, then strain. Mix in juice.

Freeze mixture in an ice cream maker according to the manufacturer's directions

or pour into a metal cake pan and freeze until almost solid, about 5 hours.

Remove pan from freezer, break lime ice into chunks, and place in a food

processor fitted with the steel blade. Let stand for 10 minutes, then process

until smooth. Pour mixture into a freezer container, cover, and freeze for 1

hour, until firm. Let stand in refrigerator for 20 minutes before serving.

This freezes well for up to about 5 days.
