Green Salsa

 

Recipe By : L & J Cafe, Cooking Light, March 2000

Amount Measure Ingredient -- Preparation Method

1 pound jalapeno peppers -- stems removed

1 1/2 cups chopped tomato

1 1/2 cups chopped Vidalia or other sweet onion

1 1/2 cups water

1 teaspoon salt

3/4 teaspoon ground cumin

4 garlic cloves -- chopped

 

1. Combine all ingredients in a Dutch oven over medium-high heat; bring to a

boil. Cover, reduce heat, and simmer 20 minutes or until tender. Cool 10

minutes. Place mixture in a blender or food processor, and pulse 15 times or

until coarsely chopped (do not overblend). Yield: 4 cups (servings size: 3

tablespoons).
