Horseradish Soup

1 tablespoon butter

9 green onions -- finely diced

3 14.5-ounce cans vegetable broth

3 large russet potatoes -- peeled and cubed

1 1/4 cups fresh horseradish -- peeled and grated

1/2 teaspoon salt

Dash white pepper

 

Melt the butter in a 2-quart stock pot. Add the green onions and saute for 3

minutes. Add the vegetable broth, potatoes, and horseradish. Bring to a boil,

reduce heat, cover and simmer for 1 hour. Puree the soup in batches in the

blender, being careful not to splatter the hot liquid. Return the soup to the

stock pot. Season with salt and pepper. Heat through and serve.

 

* The milder taste of fresh horseradish, combined with potatoes, creates a

wonderful soup to serve as a first course for dinner.
