" - Dot Vartan Serving Size : 6 Preparation Time :0:00 Categories : Horseradish Potatoes Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon butter 9 green onions -- finely diced 3 14.5-ounce cans vegetable broth 3 large russet potatoes -- peeled and cubed 1 1/4 cups fresh horseradish -- peeled and grated 1/2 teaspoon salt Dash white pepper Melt the butter in a 2-quart stock pot. Add the green onions and saute for 3 minutes. Add the vegetable broth, potatoes, and horseradish. Bring to a boil, reduce heat, cover and simmer for 1 hour. Puree the soup in batches in the blender, being careful not to splatter the hot liquid. Return the soup to the stock pot. Season with salt and pepper.
