Corn Chowder

Amount Measure Ingredient -- Preparation Method

6 ears of corn

7 cups cold water

2 tablespoons olive oil

1 1/2 cups chopped onion

3/4 cup chopped red bell pepper

2 potatoes -- peeled and cubed

2 teaspoons salt

1/4 teaspoon ground white pepper

1/8 to 1/4 teaspoon cayenne pepper

1/4 teaspoon ground thyme

1 cup half and half

 

Shuck the corn and set aside. Place the corn cobs into a 6-quart stock pot.

Add the cold water. Bring to a boil, lower heat, cover and simmer for 10

minutes. Remove the cobs and set aside to cool. Pour the cooking broth into a

large bowl and set aside. Heat the olive oil in the stock pot. Saute the

onion in the oil for 5 minutes. Stir in the chopped pepper and cook for 10

minutes. Stir in the cubed potatoes and cook for an additional 5 minutes. Add

the 7 cups reserved corn broth, salt, pepper, cayenne, and ground thyme. Stir

well. Bring to a boil, lower heat, cover and simmer for 30 minutes, until the

potatoes are soft. In the meantime, remove the corn from the cobs. Discard

the cobs. Next, puree the soup in batches in a food processor, being careful

not to splatter the hot liquid. Return the puree to the stock pot. Stir in

the remaining corn and the half and half. Heat through and serve.
