Green Bean Potato Soup

4 tablespoons butter

5 stalks celery -- chopped

5 carrots -- chopped

1 bunch green onions -- chopped

1 small onion -- chopped

3 tablespoons flour

2 quarts water

2 cups non-fat powdered milk

3 medium potatoes -- peeled and diced

1/4 teaspoon salt

1/4 teaspoon ground white pepper

1/2 cup chopped parsley

1 tablespoon Herbes de Provence

1 1/2 cups non-fat sour cream

1 10-ounce package frozen French-style green beans

 

Melt the butter in a 6-quart stock pot. Saute the celery, carrots, and onions

for 15 minutes. Stir in the flour. Gradually stir in the water and then the

powdered milk. Cook over medium heat until thickened, about 10 minutes. Add

the diced potatoes, salt, pepper, parsley, and Herbes de Provence. Simmer,

stirring frequently, until the potatoes are tender, about 30 minutes. Stir in

the sour cream, blending well. Add the green beans. Simmer for 20 more

minutes. Serve.

 

NOTE: Herbes de Provence can be purchased at any gourmet food store. It is a

combination of many herbs--rosemary, thyme, marjoram, etc. You can use any of

these by themselves as a substitute.
