Guest guest Posted May 3, 2000 Report Share Posted May 3, 2000 * Exported from MasterCook * Skillet Creole Peas Recipe By : Cooking Light, 1988 Serving Size : 6 Preparation Time :0:00 Categories : Beans Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package frozen black-eyed peas -- (10-ounce) Vegetable cooking spray 3/4 cup chopped onion 1/2 cup chopped celery 1/2 cup chopped green bell pepper 1 clove garlic -- minced 1 (14.5-oz)can whole tomatoes -- undrained & chopped 1/4 teaspoon dried whole thyme 1/4 teaspoon red pepper 1/8 teaspoon red pepper 1/8 teaspoon hot sauce Dash of ground allspice 1 bay leaf Cook peas according to package directions, omitting salt and fat; drain and set aside. Coat a large skillet with cooking spray, place over medium heat until hot. Add onion, celery, green pepper, and garlic. Saute until tender. Stir in reserved peas and remaining ingredients. Cook over medium-low heat 10 minutes, stirring occasionally. Remove and discard bay leaf before serving.
