Spinach Salad With Grapefruit--Vegan

Amount Measure Ingredient -- Preparation Method

2 tablespoons cider vinegar

2 tablespoons honey

2 tablespoons dijon mustard

6 tablespoons olive oil

1/2 cup red onion -- chopped

1/4 cup sesame seeds

1 large bunch of spinach

2 grapefruits -- peeled with sections

 

In a bowl, whisk together the vinegar, honey, and mustard. Add the oil slowly,

whisking all the time. Set the dressing aside.

 

In a skillet, add some oil and cook the onion until it is translucent. Add the

sesame seeds and cook until they are golden brown. Stir often.

 

In a large serving bowl, toss together the spinach, grapefruit, and onion

mixture. Add the mustard dressing to suit your taste.
