Guest guest Posted May 2, 2000 Report Share Posted May 2, 2000 * Exported from MasterCook * Ricotta-Stuffed Peppers Recipe By : American Wholefoods Cuisine Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium green peppers 2 cups ricotta cheese 1 cup shredded mozzarella cheese 2 tablespoons grated Parmesan cheese 1 egg 1/2 teaspoon oregano 2 cups tomato sauce -- Italian style, flavored with garlic, basil, and oregano Cut peppers in half through he stem. Remove seeds and any thick inside ribs. Mix cheeses with egg and oregano. Stuff into pepper halves. Heat sauce in a skillet large enough to hold peppers in a single layer. When simmering, arrange peppers, stuffing side up, in sauce; cover and simmer over low heat for about 20 minutes until pepper is tender, but still crisp. Spoon sauce on top to serve.
