Baked Boston Brown Bread

Amount Measure Ingredient -- Preparation Method

2 cups cornmeal -- (yellow or white)

1 cup rye-wheat flour

OR 1/2 cup rye flour and 1/2 cup white

flour

2 teaspoons baking soda

3/4 teaspoon baking powder

1/2 teaspoon salt

2/3 cup molasses

2 cups buttermilk

1/4 teaspoon ground ginger

1 cup currants

OR dark raisins

 

Preheat oven to 350°F. Grease a 9x5-inch loaf pan.

 

Stir together cornmeal, flour, baking soda, baking powder, and salt in a mixing

bowl. Stir in molasses, buttermilk, ginger, and currants just until mixed.

 

Pour batter into prepared loaf pan. Bake on the center rack of the oven for 55

minutes or until a tester inserted in the center comes out dry.

 

Cool in pan for 5 minutes then turn out onto a wire rack.
