Spicy Cheese Manicotti

8 manicolli -- uncooked

1 cup lowfat cottage cheese

1/3 cup grated parmesan cheese

2 ounces mozzarella cheese -- (1/2 cup) shredded

1 egg white -- slightly beaten

2 tablespoons fresh parsley -- chopped

1/2 teaspoon dried oregano

1/8 teaspoon ground red pepper -- (cayenne)

1 16-ounce can canned whole tomatoes -- undrained, cut up

4 ounces chopped green chiles -- undrained

1 tablespoon cornstarch

 

MICROWAVE DIRECTIONS: Cook manicotti to desired doneness as directed on

package. Drain; place in cold water.

 

In medium bowl, combine cottage cheese, Parmesan cheese, mozzarella cheese, egg

white, parsley, oregano and ground red pepper, blend well. Drain manicotti.

Spoon cheese mixture into manicotti shells; place side by side in ungreased

12x8-inch (2-quart) microwave-safe baking dish.

 

In 4-cup microwave-safe measuring cup or medium bowl, combine tomatoes, chilies

and cornstarch; blend well. Microwave on HIGH for 6 to 7 minutes or until

thickened, stirring once halfway through cooking. Pour over filled manicotti in

dish. Cover with microwave-safe plastic wrap. Microwave on HIGH for 6 to 7

minutes or until thoroughly heated, rotating dish 1/2 turn halfway through

cooking.
