Guest guest Posted April 29, 2000 Report Share Posted April 29, 2000 * Exported from MasterCook * Poppy Seed-Fruit Salad Recipe By : www.cookinglight.com Serving Size : 12 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons cornstarch 1/3 cup unsweetened apple juice 1/3 cup oil-free sweet-and-sour dressing 1 tablespoon vegetable oil 1/2 teaspoon poppy seeds 4 cups medium whole fresh strawberries -- halved 3 cups honeydew melon balls 1 1/2 cups seedless red grapes 1 1/2 cups seedless green grapes 4 medium fresh peaches -- peeled and cut into -- chunks 2 cups sliced ripe banana Combine cornstarch and apple juice in a small saucepan, stirring well. Bring to a boil over medium heat, stirring constantly. Reduce heat, and simmer 2 minutes or until thickened, stirring constantly. Pour mixture into a small bowl. Add dressing, oil, and poppy seeds; stir well. Let cool completely. Combine strawberries and next 4 ingredients in a large bowl. Add poppy seed mixture; toss gently. Cover and chill. To serve, add banana; toss gently. Yield: 12 servings (serving size: 1 cup).
