Taco Rice

2 tablespoons olive oil

1 cup onions -- finely chopped

1/2 green pepper -- chopped

1 16 oz. can whole tomatoes

3 cups vegetable broth

1 package taco seasoning mix

2 cups rice

 

Heat olive oil in a large saucepan or Dutch oven. Add onions and bell

peppers and cook about 5 minutes. Add whole tomatoes (with liquid), mashing

tomatoes to break up, and cook an additional 5 minutes. Stir in the broth and

taco seasoning and bring to a boil. Add the rice and salt; reduce heat to a

simmer, and cook, covered, for 20 minutes. Remove from heat and let sit for

about 5 minutes.
