Angel Hair/Creamy Tofu-Tomato Sauce

1 teaspoon olive oil

1 onion -- chopped

3 large garlic cloves -- finely chopped

12 ounces soft tofu

2 1/2 cups tomato sauce

2 cups finely chopped kale -- steamed

2 1/2 cups finely chopped broccoli -- steamed

1/2 tablespoon tamari soy sauce

1/2 teaspoon salt

 

In a large pot of boiling water, cook pasta until tender but firm. Drain and

set aside.

In a small saucepan, heat oil over medium heat. Add onion and garlic; saute

until softened. Set aside.

In a food processor or blender, puree tofu and tomato sauce until creamy and

smooth. Transfer mixture to medium-sized pot and heat 3 to 4 minutes. Stir in

kale, broccoli. sauteed onion and garlic, along with tamari and salt. Cover pot

and simmer over low heat 7 to 8 minutes, stirring occasionally.

Pour sauce over pasta and serve.
