1 cup Tofu " Cheese "

olive oil

1 to 2 teaspoons salt

 

The Tofu " Cheese " for this recipe doesn't need to marinate for a full week if

you'd rather use it sooner; about 5 days would do. Break the marinated " cheese "

into 1/2 " pieces, place in a container, add the salt and fill with enough olive

oil to cover the pieces. Cover and marinate 12 to 24 hours. Drain to use in

salads or pasta recipes. The olive oil can be reused as long as it smells

fresh.
