Fiesta Rice Medley

Amount Measure Ingredient -- Preparation Method

2 teaspoons butter or margarine

2 cups broccoli florets

1/2 cup carrots -- sliced

1/2 cup green pepper strips

1 1/4 cups water

1/4 cup salsa

2 teaspoons chicken-flavor seasoning or vegetable

bouillon granules

1 cup uncooked rice (regular or quick-cooking)

 

In a nonstick skillet, melt butter or margarine. Add vegetables;

cook, and stir over med-high heat until vegetables are tender crisp. Add

water, salsa, and seasoning or bouillon granules; bring to a boil. Stir

in rice. If using regular rice, cover and cook for length of time package

directs. If using quick-cooking rice, cover, remove from heat, and let

stand 5 minutes or until liquid is absorbed.
