Guest guest Posted April 26, 2000 Report Share Posted April 26, 2000 * Exported from MasterCook * Josh's Banana Bread Recipe By :Soy of Cooking - Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable oil cooking spray 3/4 cup soymilk lite 1 tablespoon lemon juice 2 cups whole wheat pastry flour 1/4 cup soy flour 1 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon cinnamon 1/3 cup prune puree 1 cup mashed bananas (2 to 3 bananas) 3/4 cup Florida Crystals or sugar 1 tablespoon egg replacer powder 1/4 cup water 1 teaspoon vanilla extract Streusal 1/3 cup walnut pieces 2 tablespoons soy grits 2 tablespoons brown sugar 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg Preheat oven to 350F. Coat a 9 x 5-inch loaf pan with cooking spray. Place soymilk in a small glass measuring cup, and add the lemon juice. Set aside. Mix together the next 6 ingredients. Set aside. Place prune puree in a large bowl. Add mashed bananas and Florida Crystals. Whisk together egg replacer powder and water in a small bowl until foamy. Add egg replacer and vanilla to the prune/banana combination. Mix thoroughly. Fold liquid ingredients into dry ingredients alternately with soymilk. Mix together streusel ingredients. Pour half the batter into the prepared pan. Top with streusel, then add remainder of the batter. Sprinkle generously with cinnamon and nutmeg.
