(Dixie Diner) at 1-800-233-3668 * Exported from MasterCook * Peanut Butter Banana Squares Recipe By :Soy of Cooking - Marie Oser Serving Size : 25 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable oil cooking spray 3/4 cup soymilk lite 1 tablespoon lemon juice 2 1/2 cups whole wheat pastry flour 1/2 cup soy grits 1 1/2 teaspoons baking soda 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1 teaspoon cinnamon 1/3 cup crunchy peanut butter 1/3 cup prune puree 1 cup mashed banana (2 medium) 1/2 cup Fruitsource or honey 1 tablespoon egg replacer powder 1/4 cup water 1/2 cup date nuggets cinnamon nutmeg Preheat oven to 350F. Spray a 9 x 13-inch pan with cooking spray. Place soymilk and lemon juice in a small measuring cup; set aside. Mix together the next 6 ingredients in a large bowl; set aside. Blend peanut butter, prune puree, and banana in a medium bowl. Add Fruitsource, and blend well. Place egg replacer and water in a small bowl. Whisk until frothy, and add to peanut butter mixture. Fold liquid ingredients into the dry ingredients alternately with soymilk. Pour batter into prepared pan. Sprinkle generously with cinnamon and nutmeg. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Date Nuggets - These are chopped dates that are rolled in oat flour rather than sugar. Thet are available in health food stores and specialty stores. Florida Crystals - This is an unbleached and minimally processed sugar, which is light in color and finely granulated.
