Mushroom Broccoli Calzones

1 Prolific Pizza Dough recipe

1 1/2 teaspoons olive oil

1/4 teaspoon crushed red pepper

1 cup sliced scallions

4 cloves garlic -- minced

1/4 cup chopped green bell pepper

6 ounces cremini mushrooms -- sliced

4 cups broccoli florets

1/4 cup very dry sherry

1 tablespoon tamari soy sauce

1 teaspoon dried thyme

1 tablespoon cornstarch

2 tablespoons water

vegetable cooking spray

cornmeal

 

While pizza dough is rising, make filling.

Heat oil and crushed pepper in a medium saucepan for 2 minutes. Add scallions,

garlic, and green pepper; saute 3 minutes. Add mushrooms, and cook 3 minutes.

Add broccoli, and cook 3 minutes. Add sherry, tamari, and thyme. Blend

cornstarch and water in a small bowl; stir into mixture.

Preheat oven to 400F. Spray a baking pan with cooking spray. Dust lightly with

cornmeal. Divide dough into 6 equal portions. Work with one portion at a time;

keep remaining dough covered with a clean towel. Roll each portion into a ball

between palms of hands. Pat dough gently, and roll into a circle. Place

filling on one side of the circle, then fold dough over the filling. Press the

crescent closed with a fork. Place on prepared baking pan and bake 15 to 20

minutes, until lightly browned.
