Guest guest Posted April 26, 2000 Report Share Posted April 26, 2000 This is needed for the Mushroom Broccoli Calzones I'm sending- * Exported from MasterCook * Prolific Pizza Dough Recipe By :Soy of Cooking - Marie Oser Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups whole wheat flour 1 1/4 cups unbleached flour 1/3 cup soy flour 1 teaspoon salt 2 1/2 teaspoons yeast 1 cup warm water 1 tablespoon liquid Fruitsource vegetable cooking spray FOOD PROCESSOR METHOD Place the first 5 ingredients in the food processor, and pulse to mix. Place the water and Fruitsource in a small measuring cup. Warm in the microwave for 3 minutes or on the stovetop. It should be warm to the touch, no more than 125 degrees (a little warmer than your finger). Add water to the food processor. Process until the mixture forms a ball. Turn onto a floured surface, and knead about 5 minutes, adding just enough white flour to make the dough smooth and not sticky. At this point you may place the dough in a lightly oiled plastic bag and store it in the refrigerator for up to 2 days. CONVENTIONAL METHOD Set aside 1 cup of unbleached flour. Combine the remaining flours in a large bowl with salt and yeast. Combine water and Fruitsource and heat to 125 degrees. Add the liquid to the dry ingredients, and mix well, adding just enough of the reserved flour so the dough pulls away from the sides of the bowl. Turn dough onto a floured board, and knead until smooth and elastic. Lightly spray a large bowl with cooking spray. Place the dough in the prepared bowl. Cover the bowl with a clean towel, and set it in a warm place to rest for an hour or so. Place the dough on a lightly floured surface, and knead lightly for about 2 minutes. BOTH METHODS Roll dough into a circle about an inch larger than the perimeter of the pan, and fold the overlap, pinching to form a lip around the edge of the pan.
