I'm always trying to eat more sweet potatoes. DH does not like them.

Amount Measure Ingredient -- Preparation Method

2 onions -- chopped

1 red bell pepper -- chopped

6 cloves garlic -- minced

2 tablespoons mild chili powder

1 tablespoon ground cumin

1 teaspoon cayenne pepper -- or to taste

1 pound tomatillos

husks removed and cut into quarters

OR 1 green bell pepper -- chopped,

OR 4-oz. canned chopped green chilies

2 large or 4 small sweet potatoes

scrubbed and cut into 1/2-inch cubes

3 cups bouillon

15 ounces canned small white beans -- drained

2 cups cooked barley

OR other whole grain of your choice

 

Combine the onions, bell pepper, garlic, spices, tomatillos, sweet potatoes

and bouillon in a large pot. Bring to a boil, reduce heat and simmer,

uncovered, 40 minutes or until the sweet potatoes are very tender.

 

Stir in the beans and barley and heat through.

 

Yield: 6 to 8 servings, calories: 240, fat: 2g, fiber: 12g.

Amount Measure Ingredient -- Preparation Method

3 medium sweet potatoes -- scrubbed or peeled

and cut into chunks

1 large or 2 small mangoes

peeled and cut into chunks

1 onion -- chopped

1 tablespoon minced fresh ginger root

6 cups bouillon

2 teaspoons mild curry powder

1 pinch cayenne pepper -- or to taste

 

Chopped fresh cilantro or fresh flat-leaf parsley for garnish (optional)

Combine all ingredients except cilantro in a large pot. Bring to a boil,

reduce heat and simmer, uncovered, 30 to 40 minutes or until sweet potatoes

are very tender. Using a hand blender or a blender, puree the soup until

smooth. Adjust the seasonings and ladle soup into bowls. Garnish with

cilantro or parsley, if desired.

 

Yield: 4 to 6 servings, calories: 149, fat: 1g, fiber: 4g.
