This uses the recipe for Vegetairian Worcestershire Sauce-

Miso Caesar Dressing

Amount Measure Ingredient -- Preparation Method

2/3 cup reduced-fat, medium-firm tofu OR 5 oz

reduced-fat extra firm silken tofu

1/4 cup water, vegetable broth, or bean broth

1/4 cup fresh lemon juice

2 tablespoons light soy or chick-pea miso

1 tablespoon red wine vinegar

1 teaspoon Dijon mustard

2 cloves garlic -- peeled

1/2 teaspoon salt

1/2 teaspoon pepper

2 dashes Louisiana hot sauce

1/4 teaspoon Vegetarian Worcestershire Sauce (optional)

 

Place all the ingredients in a blender, and process until smooth. Refrigerate.

This makes enough for 2 big salads. Miso takes the place of anchovies. Toss

the dressing with crisp Romaine lettuce, croutons, and a little soy Parmesan.
