Oven-Roasted Yukon Gold Potatoes W/Piquant Horseradish Sauce

16 Yukon or other gold potatoes -- halved

Olive-oil flavored nonstick spray

1 tablespoon olive oil

2 teaspoons prepared horseradish

2 teaspoons honey mustard

1 teaspoon fresh lemon juice -- or to taste

up to 2

1/2 teaspoon finely minced garlic

 

Serves 8.

 

This piquant sauce is delicious as a side offering with roasted entrees and

vegetables, especially oven-roasted potatoes.

 

Preheat oven to 400 degrees. Arrange potatoes on a large baking

sheet. Spray with olive-oil-flavored nonstick spray. Bake for 25 minutes,

or until soft.

 

In a small bowl, combine olive oil, horseradish, mustard, lemon juice and

garlic. Serve with potatoes.

1/3 cup low-fat mayonnaise

2 tablespoons prepared horseradish -- or to taste

1 teaspoon honey mustard

1/2 teaspoon minced fresh parsley -- (optional)

 

Makes about 1/2 cup.

 

In a medium bowl, combine mayonnaise, horseradish, mustard and parsley.
