This piquant sauce is delicious as a side offering with roasted entrees and vegetables, especially oven-roasted potatoes. Preheat oven to 400 degrees. Arrange potatoes on a large baking sheet. Spray with olive-oil-flavored nonstick spray. Bake for 25 minutes, or until soft. In a small bowl, combine olive oil, horseradish, mustard, lemon juice and garlic. Serve with potatoes.
