Honey-Mustard Marinade For Steamed Vegetables

(I do this the simple way by mixing honey and Dijon mustard

together. Nothing else)

Honey-Mustard Marinade For Steamed Vegetables

Amount Measure Ingredient -- Preparation Method

1/4 cup olive oil

2 tablespoons honey -- (or to taste)

2 tablespoons water

2 tablespoons reduced-calorie mayonnaise

1 tablespoon minced fresh parsley

1 tablespoon nonfat plain yogurt

1 tablespoon vinegar

1 tablespoon minced green onions

2 teaspoons mild yellow mustard

 

Makes 3/4 cup.

 

In a small bowl, whisk together oil, honey, water, mayonnaise, parsley,

yogurt, vinegar, onions and mustard. Pour marinade over steamed vegetables.

 

Nutrition information per 1 tbsp. serving:

 

Calories 60, Carbohydrates 3 g, Protein 0 g, Fat 5 g, including sat. fat 1

g, Cholesterol 0 mg, Sodium 31 mg, Calcium 4 mg, Dietary fiber 0 g.

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

2 tablespoons balsamic vinegar

2 tablespoons chopped fresh herbs

1 teaspoon soy sauce -- up to 2

1/2 teaspoon Dijon mustard

Salt and pepper to taste

4 cups torn lettuce

1 cup chopped endive -- (optional)

1 cup chopped green cabbage

1/2 apple -- cored and diced

 

Serves 4.

 

In a salad bowl, whisk together oil, vinegar, herbs, soy sauce and

mustard. Add salt and pepper to taste. Add lettuce, endive, cabbage and

apple; toss well.

 

Nutrition information per serving:
