Awesome. Don't really need the tofu (unless you like it a bunch). Onions (we added) were good. Sherry gives a great taste to the spinach! oh me...just remembering makes me hungry. Recipe By :Joanne Hush, Classic Chinese Cooking, p 144 Serving Size : 6 Preparation Time :0:00 Categories : Asian Spinach Tofu Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh spinach 2 tablespoons peanut oil -- see my notes 1 clove garlic -- minced 1/2 teaspoon salt 1/2 pound firm tofu -- in 1/2 " cubes 1 tablespoon rice wine -- or dry sherry (I added sliced onions) Wash and thoroughly dry the spinach. Remove any tough stems. Place a wok over medium-high heat. When it begins to smoke, add the peanut oil and the garlic. Stir briefly, then add the spinach and salt. Stir-fry just until the spinach is wilted. about 1 minute. Gently stir in the tofu and sprinkle with rice wine. Cook until the tofu is heated through, about 1 minute. Serve immediately. I used very dry sherry and used about 3 cloves of garlic. I added sliced onions. Next time I make it, I will use less tofu, - or none even, and maybe some hot red chili pepper flakes...and MORE spinach and LOTS of garlic. Use LOTS of spinach as it really cooks down. Boy, the taste is just awesome. Oh, we had no peanut oil...so we used a little olive oil and a little canola oil. Our wok shape pan on electric smooth top stove worked fine. Brenda Adams 4/2000.
