Guest guest Posted April 21, 2000 Report Share Posted April 21, 2000 * Exported from MasterCook * Italian Salad with Artichokes Recipe By : Serving Size : 4 Preparation Time :0:05 Categories : Beans Quick and Easy Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon red wine vinegar Salt & pepper to taste 1 jar marinated artichoke hearts -- (6 to 6-1/2 oz.) 1 can garbanzo beans -- (8-3/4 oz.) drained 1 medium tomato -- cut into chunks 6 cups packaged Italian Salad Mix or desired greens Place salad greens in medium-sized bowl . Drain artichoke hearts, reserving 1/4 cup of marinade in a 1 cup measure; discard remaining marinade. Add artichoke hearts, garbanzo beans and tomatoes to greens. Mix vinegar into artichoke marinade, season with salt and pepper.
