Egg Replacer

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 cup potato starch

3/4 cup tapioca flour

2 teaspoons baking powder

 

Mix well and store in an air-tight container.

 

To use: 1 1/2 teaspoons powder mix + 2 Tablespoons water = 1 egg

Notes: I determined the yield by converting the ingredients to teaspoons

and dividing the total by 1 1/2 to determine the number of non-eggs.

 

Potato starch may be obtained from Asian markets. Do not confuse this

with potato flour which is dried powdered potato. Perhaps arrowroot or

some other starch would be acceptable substitutes -- I don't know. -N.B.
