Guest guest Posted April 20, 2000 Report Share Posted April 20, 2000 * Exported from MasterCook * Creamed Pasta With Vegetables Recipe By :Soy of Cooking - Marie Oser Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1/4 teaspoon crushed red pepper 1 leek -- well rinsed, cut into 1/4-inch slices 5 cloves garlic -- minced 1 pound green beans -- cut into 1-inch pieces 1 cup white wine 1 1/4 cups lite silken tofu (firm) -- drained 1 1/2 cups soymilk lite 1 tablespoon Bragg liquid aminos 2 tablespoons mellow white miso 3 tablespoons nutritional yeast 2 tablespoons whole wheat flour 1/2 pound pasta (penne, large elbows, etc.) 1 bunch fresh spinach -- well rinsed Heat olive oil and crushed pepper in a large saucepan over medium-high heat for 1 minute. Add leeks, garlic, and green beans. Saute 5 minutes. Add wine, and reduce heat; simmer 10 minutes. Place tofu in food processor, and blend. Add soymilk and next 4 ingredients. Pulse to mix, then blend until smooth. Fold into green bean mixture; simmer. Cook pasta according to package directions. Three minutes before pasta is finished, add spinach to the cooking water. Drain pasta and spinach in a colander. Remove green bean/cream sauce mixture from heat, and fold in pasta/spinach mixture. Serve immediately.
