Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil -- or sesame oil 1 clove garlic -- chopped 1 tablespoon finely chopped fresh ginger 1 cup papaya nectar -- or mango nectar 1 1/4 cups water 1 cup regular or basmati rice 1 medium papaya -- seeded, peeled, and cut into small cubes (or 1 medium mango) salt & pepper to taste In a medium saucepan, heat oil and saute garlic about 1 minute. Stir in fruit nectar and water. Bring to a boil, add rice and simmer, covered, about 15 minutes. Stir in papaya and cook covered 5 more minutes or until rice is tender. Source: " Karen C.
