Kathleen * Exported from MasterCook * Spicy Black Beans With Corn Recipe By : www.strongwomen.com/recipes.htm 4/00 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 32 ounces canned black beans 16 ounces canned whole kernel corn 16 ounces canned diced tomato 4 ounces jarred chopped chili peppers OR 1/2 cup hot salsa 2 tablespoons spicy barbecue sauce 1 teaspoon cumin or chili powder This tasty and nutritious dish couldn't be easier to make - just open a few cans, season, stir and heat. Use as a side dish, or serve over brown rice as a vegetarian main event. Serves 4 as a main course or serves 8 as a side dish. In a 3-quart saucepan, mix together the black beans, tomato, corn, chili peppers or salsa, barbecue sauce and cumin or chili powder. Simmer for 10 minutes, stirring occasionally or bake for 20 minutes at 350 degrees.
