Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon extra virgin olive oil 1 clove garlic -- finely chopped 1 medium onion -- chopped 1 large tomato -- seeded & coarsely chopped (about 1 cup) 2 10 oz cans low-sodium condensed tomato soup 4 1/2 ounces orzo -- uncooked 2 tablespoons chopped fresh basil -- or 2 tsp dried salt & pepper to taste In a large saucepan, heat oil and saute garlic and onion for 1 minute. Add tomato, and cook over medim heat, stirring occasionally, for 3 minutes. Add condensed soup and orzo. Bring to a boil, cover, and simmer 10 minutes or until orzo is tender.
