Guest guest Posted April 19, 2000 Report Share Posted April 19, 2000 * Exported from MasterCook * Oven-Baked Tempeh Recipe By :Soy of Cooking - Marie Oser Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 teaspoons olive oil 1/8 teaspoon crushed red pepper 1 leek -- well rinsed and cut into 1/8-inch slices 1/3 cup sliced shallots 1/2 cup chopped red bell pepper 4 cloves garlic 2 cups baby carrots 1 cup diced zucchini 1 8 oz package tempeh -- seasoned 1/2 cup dry sherry 1 medium tomato -- diced 1 tablespoon tamari soy sauce Preheat oveen to 350F. Place oil and crushed pepper in a stovetop-safe and ovenproof casserole dish. Saute over medium-high heat 1 minute. Add the next 4 ingredients, and saute 3 minutes. Add carrot chunks and zucchini. Saute, stirring frequently, 5 minutes. Add tempeh, and saute 5 minutes. Add sherry, diced tomato, and tamari; cook mixture 5 minutes.
