Guest guest Posted April 19, 2000 Report Share Posted April 19, 2000 * Exported from MasterCook * Moussaka Recipe By :Soy of Cooking - Marie Oser Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable oil cooking spray 5 medium russet potatoes 1 2/3 cups beef-flavored vegetable broth -- boiling 3 cups TVP. ground beef style 1 1/2 teaspoons olive oil 1 cup chopped red onion 6 cloves garlic -- minced 1 28 oz can peeled and diced tomatoes 1 teaspoon dried basil 1/4 teaspoon lemon pepper cayenne , to taste 1/3 cup whole wheat bread crumbs -- reserve 3 tablespoons White Sauce 1 tablespoon olive oil 2 large shallots -- chopped (1/4 cup) 3 tablespoons whole wheat flour 1/2 cup white wine 1 1/2 cups soymilk lite 1 cup nutritional yeast 2 tablespoons cornstarch 3 tablespoons water 1/8 teaspoon ground nutmeg Preheat oven to 350F. Spray a 9 x 13-inch baking pan with cooking spray. Cut unpeeled potatoes in 1/4-inch slices and parboil for 10 minutes. Set aside. Pour boiling broth over TVP in a medium bowl. Set aside. Heat olive oil in a 5-quart saucepan over medium-high heat. Add onion and garlic; saute for 3 minutes. Stir in reconstituted TVP, and cook mixture 3 minutes. Add tomatoes and seasonings. Reduce heat to simmer, stirring occasionally. Heat olive oil in a medium saucepan. Add shallots, and saute 3 minutes. Stir in flour to form a paste. Add wine; stir until smooth. Gradually add soymilk, then whisk in yeast 1/3 cup at a time. Blend cornstarch with water, and add to sauce. Simmer until thickened. Sprinkle half the breadcrumbs along the bottom and sides of prepared pan. Layer the potato slices along the bottom of the pan, overlapping slightly. Top with the TVP mixture. Pour the sauce over all, then sprinkle with nutmeg and reserved bread crumbs.
