I'm not vegan so I don't remember if honey is considered vegan. Anyway,

here are two recipes without dairy or eggs, but with honey. Kathleen

2 cups peeled and finely grated carrots -- (firmly packed)

1 large orange -- juice of

2 teaspoons vanilla extract

1/4 cup light olive oil

1 cup honey

liquefied in microwave - 30 seconds

1/2 cup crushed or chopped pineapple

1 cup unbleached white flour

1 1/2 cups whole-wheat pastry flour

2 teaspoons baking soda

1 teaspoon cinnamon

1/2 teaspoon ground allspice

3/4 cup walnuts -- chopped

 

1. Preheat oven to 350ºF.

 

2. Mix together the carrots, orange juice, vanilla, olive oil, honey, and

pineapple.

 

3. Sift together the flours, baking soda, and spices. Mix in the walnuts.

 

4. Blend the dry ingredients into the wet ones, stirring until just mixed.

 

5. Put the batter into a nonstick 8-inch-square baking pan and bake for

45-60 minutes until a knife inserted in the center comes out clean. Remove

from oven, let cool slightly, and remove from pan.

 

Servings: 9. Calories 375, fat 12.5 g (29% of calories from fat),

saturated fat 1 g, protein 7 g, carbohydrate 63 g, cholesterol 0 mg, sodium

6 ripe bananas -- (6 to 7)

1 1/8 cups raw honey

1/3 cup canola oil

2 teaspoons pure vanilla extract

3 cups whole-wheat pastry flour

2 1/2 teaspoons baking soda

1/4 teaspoon salt

1 1/2 cups chopped walnuts or pecans

 

Native to the Caribbean and Central America, bananas are touted as " the

world's most perfect food. " They're loaded with potassium -- one banana

contains 450 mg, one-fifth of the adult daily requirement -- and offer

plenty of magnesium (33 mg) and vitamin C (10 mg), too. In addition,

bananas help to strengthen the stomach lining and are good for soothing

indigestion. This recipe uses the common Cavendish variety, but bananas

also can be short, red, and chunky, or large and squashlike in their

composition. Look for these tasty alternatives in your market as well as

recipes for their preparation. Most banana bread recipes are saturated

with butter and sugar. This one uses a small amount of canola oil instead

-- which is much better for your heart -- and honey, which of course means

lots of flavor.

 

1. Mash the bananas and mix with the honey, canola oil and vanilla extract.

 

2. Sift together the pastry flour (not regular whole-wheat flour), baking

soda and salt. Add the nuts.

 

3. Blend the two mixtures and divide into 2 lightly oiled loaf pans. Bake

at 350ºF for 40 minutes, or until center is set.
