Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large clove garlic -- chopped 1 tablespoon extra virgin olive oil 1/2 teaspoon ground cumin 1/4 teaspoon ground ginger 1 tablespoon lemon juice 1 teaspoon grated lemon rind 2 tablespoons finely chopped fresh cilantro 1 15 oz can chickpeas -- rinsed & drained salt & pepper to taste In a large bowl, combine garlic, olive oil, cumin, ginger, lemon juice, lemon rind, and cilantro.
