I made this a couple weeks ago, and if anyone else is crazy for artichokes, I

highly recommend this. It's super easy, too. And I used canned white corn as I

was unable to find any frozen.

Creamed Artichokes

1 tablespoon olive oil

1/8 teaspoon crushed red pepper

3/4 cup sliced scallions

3 cloves garlic -- minced

3 tablespoons whole wheat flour

1 1/2 cups soymilk lite

1/2 cup nutritional yeast

1 13 3/4 oz can quartered artichokes

1 cup frozen white corn -- thawed

1 tablespoon dried marjoram

1 tablespoon tamari soy sauce

dash cayenne

 

Heat oil and crushed pepper in a medium saucepan over medium-high heat. Add

scallions and garlic; saute 3 minutes. Stir in flour and cook to a paste, 1 to

2 minutes. Add soymilk gradually, stirring over medium heat. Add nutritional

yeast, stirring until smooth and thickened, about 2 minutes. Add remaining

ingredients and lower heat. Simmer 8 minutes, or until ready to serve.
