Guest guest Posted April 17, 2000 Report Share Posted April 17, 2000 I know the recipe title is wierd, it's the author's title, though - not meant to trigger a discussion. * Exported from MasterCook * Vegetarian Beef Stroganoff Recipe By :Soy of Cooking - Marie Oser Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable oil spray 1 tablespoon cider vinegar 1 1/2 cups soymilk lite 2 14 oz packages Gimme Lean, ground beef style 1/4 cup bread crumbs 1/3 cup ketchup 1 tablespoon Dijon mustard 1/2 teaspoon granulated garlic 2 tablespoons olive oil 3/4 cup chopped sweet onion (Texas, Vidalia, Maui) 6 cloves garlic -- minced 1/4 cup whole wheat flour 1/2 cup white wine 1/4 cup dry vermouth 1/2 teaspoon ground nutmeg 2/3 cup nutritional yeast 6 large basil leaves -- snipped Preheat oven to 400F. Spray a baking sheet with cooking spray. Add vinegar to soymilk in a small glass measuring cup; set aside. Place the next 5 ingredients in a large bowl, and mix thoroughly. Form into 3-inch balls, and place on prepared pan. Spray " meatballs " lightly with cooking spray. Bake for 10 minutes, thn broil to brown tops. Meanwhile, heat oil in a 5-quart saucepan over medium heat 1 minute. Add onions and garlic; saute 3 minutes. Add flour and stir for 2 minutes; then add wine, vermouth, and nutmeg. Lower heat, and gradually add soymilk, stirring frequently as it simmers. Whisk in nutritinal yeast, and add snipped basil. Add cooked " meatballs " to simmering sauce.
