My Obligatory Homepage http://home.att.net/~bonnithoza * Exported from MasterCook * GRAPE TOMATO PASTA Recipe By : New Italian - Fresh Fun in the Kitchen by Chef Tony Merola Serving Size : 1 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 Oz spaghetti or other pasta 1/2 cup olive oil 1/3 cup balsamic vinegar 2 cups grape tomatoes -- halved * 1/2 cup chopped fresh parsley 1/4 cup chopped fresh basil Salt & pepper to taste 1/2 cup grated Parmesan cheese Cook pasta according to package directions: drain well. Meanwhile, combine oil & vinegar in jar: cover & shake vigorously. In a large skillet, combine cooked pasta, oil-vinegar mixture & tomatoes. Heat over low heat, tossing gently. Add parsley, basil, salt & pepper. Heat thoroughly. Sprinkle each serving with Parmesan cheese. Serves 4-6. * The tomatoes are the size and shape of Thompson seedless green grapes. They're sold in plastic pint containers, and they taste almost as good as tomatoes plucked from a backyard vine. - - - - - - - - - - - - - - - - - -
