My Obligatory Homepage http://home.att.net/~bonnithoza * Exported from MasterCook * Caprise Mateo Recipe By : Christopher Matthew's Serving Size : 1 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cucumber scored & sliced 1 ear corn blanched and shaved 2 plum tomatoes 1 bunch fresh arugula 2 balls of fresh mozzarella 1 roasted red pepper 4 red onion rings -- (4 to 5) 4 basil leaves -- sliced 2 tbls. extra virgin olive oil 2 tbls. balsamic vinegar salt and pepper to taste Over bunch of arugula, place cucumber slices on edge around the plate. Continue to build up with slices of mozzarella, corn & tomatoes. Top salad with roasted red pepper pieces, basil, and red onion rings.
