Guest guest Posted April 15, 2000 Report Share Posted April 15, 2000 [Cross-posted to Veg-Recipes and SDA-veg-recipes] * Exported from MasterCook Buster * Wine-Marinated Dried Tomatoes Recipe By : Cooking With PETA Serving Size : 1 Preparation Time : Categories : Appetizer Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup light vegetarian broth mixed with 1 teaspoon cornstarch 3 ounces dried tomatoes 1/2 cup dry red wine -- (or balsamic -- vinegar, or a -- mixture) 2 cloves garlic -- peeled and minced 1 teaspoon salt 1 bay leaf 1/2 teaspoon dried thyme or rosemary -- or a sprig of fresh thyme or rosemary 1/4 teaspoon dried basil -- oregano, or -- marjoram freshly ground black pepper -- to taste Mix the broth and cornstarch in a small saucepan, and stir constantly over high heat until it thickens and clears. Mix in the remaining ingredients, and pour into a sterilized pint jar. Seal tightly and refrigerate. Shake the jar at least once a day. The tomatoes are ready when they are no longer chewy.
