Guest guest Posted April 16, 2000 Report Share Posted April 16, 2000 Golden Gratin Passover Russian Potato and Mushroom Croquettes * Exported from MasterCook * GOLDEN GRATIN Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Passover Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups Passover apricot nectar 1 cup vegetable broth -- (or Kosher for Passover vegetarian chicken broth) 6 tablespoons unsalted pareve margarine -- (3/4 stick) 1/2 cup chopped dried apricots 1 1/2 teaspoons kosher salt 1/2 teaspoon ground cinnamon 1/2 teaspoon ground pepper 5 1/2 pounds long orange-fleshed yams -- peeled, sliced 1/8 " thick Position rack in center of oven and preheat to 400°F. Generously grease 13x9x2-inch glass baking dish. Stir nectar, broth, 6 tablespoons margarine, apricots, salt, cinnamon and pepper in heavy large pot over high heat until margarine melts. Add yams; bring to boil. Cover; cook until yams begin to soften, stirring often, about 15 minutes. Using slotted spoon, transfer yams to prepared dish. Pour juices from pot over; press firmly to compact. Cover dish with heavy foil. Bake 30 minutes. Uncover and bake yams until tender and beginning to brown on top, about 55 minutes. Let stand 15 minutes. Assoc. : 0 0 0 0 0 0 0 0 * Exported from MasterCook * Passover Russian Potato and Mushroom Croquettes Recipe By : Serving Size : 5 Preparation Time :0:00 Categories : Passover Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 lbs potatoes -- peeled and chopped 5 cups water 1 onion -- peeled and chopped 1/4 lb mushrooms 1 tsp oil 1 Tbsp water salt/pepper to taste 1 cup matzoh meal 1 teaspoon oil Boil potatoes in water til tender. Drain and mash potatoes. In a separate pan, saute onions and mushrooms in oil and water over medium-high heat for three minutes. In a large bowl, mix mashed potatoes, sauteed onions and mushrooms, seasonings and matzo meal together in a large bowl. Form 10 croquettes. Heat oil in a large non-stick frying pan over med-high heat and fry croquettes for 8 minutes on each side.
