Guest guest Posted April 14, 2000 Report Share Posted April 14, 2000 * Exported from MasterCook * Busy Day Chili Recipe By :Earl Mindell's Soy Miracle Cookbook Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups TVP - with enough hot water to cover (about 1 3/4 c.) 1 onion -- coarsely chopped 1 15 1/2 oz can kidney beans -- rinsed and drained 1 cup canned corn 1/4 cup chopped fresh parsley 3 to 4 tablespoons chili powder 3 teaspoons garlic powder 1/3 cup catsup 1 teaspoon low-sodium soy sauce 2/3 cup salsa or picante sauce 2 1/2 cups water 1/2 cup shredded reduced-fat taco cheese Cover the TVP with hot water and soak until moistened. Coat a large, deep skillet with nonstick cooking spray and saute the onion until lightly bowned, about 5 minutes. Add the TVP and the remainder of ingredients to the skillet.
