Guest guest Posted April 14, 2000 Report Share Posted April 14, 2000 * Exported from MasterCook * Quinoa with Tofu Recipe By :Earl Mindell's Soy Miracle Cookbook Serving Size : 5 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 10 1/2 oz package extra-firm low-fat tofu 1/2 cup low-sodium teriyaki sauce 1 cup quinoa 2 cups water 2 teaspoons canola oil 1 teaspoon minced fresh ginger 1 onion -- minced 3 celery stalks -- chopped 2 tablespoons low-sodium soy sauce 1 cup frozen mixed vegetables -- thawed Cut the tofu into small cubes and marinate in teriyaki sauce for at least 30 minutes. Rinse the quinoa several times by running fresh water over it in a pot and pouring through a strainer. In a saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce the heat, cover, and simmer until all water is absorbed, 15 to 20 minutes. Set aside. Heat the oil in a large nonstick skillet. Add the ginger and stir. Add the onion and celery, and cook until lightly browned, about 5 minutes. Add the cooked quinoa, soy sauce, and marinated tofu to the skillet. Stir once, cover, and cook for 5 minutes. Add the vegetables. Cook for 2 minutes, covered, or until vegetables are heated through.
